Ingredients for 2 persons:
- 60 g carasau bread
- 120 g Tuscan caciotta
- 10 cherry tomatoes
- 1 yellow onion
- 4 tablespoons extra virgin olive oil
- Salt as required
- Pepper as required
- Basil as required
Useful tools:
- Vacuum machine
- 500 ml Weck jars
Star Column Equipment:
- Ultracombi
- Blast chiller
- Vacuum drawer

Preparation
Wash and quarter the tomatoes and slice the onion. Put the vegetables in a bowl and season them with salt, pepper and oil. Cut the Tuscan caciotta cheese into thin slices.
Composition
Use a silicone brush to grease the base of the 500 ml jars with a little oil. Break the carasau bread and fill the jar in layers, alternating bread and vegetables with bread and cheese. Season with fresh basil. Lastly, add a dressing consisting of an emulsion of water and extra virgin olive oil. Clean the edges and close with the lid, gasket and 4 clamps.
Microwave cooking
Set the microwave (or the Ultracombi in microwave mode) to 800 W for 5 minutes and cook one jar at a time. Once the cooking cycle is completed, remove the jar from the oven and let it rest, closed, for at least 10 minutes. After which, you can consume the meal or preserve it in the fridge for 7 days.
